The combination of bioactive coating with PL only slightly
increased the initial L. innnocua reduction in comparison to PL
alone, suggesting a weak additive effect against microbial
proliferation. However, previous works reported that the combination
of PL with natural antimicrobials, such as nisin and malic
acid, exhibited a clear additive effect against L. innocua in ready-to-
eat sausages (Uesugi and Moraru, 2009) and fresh produce
(Ramos-Villarroel et al., 2015). However, over the storage time,
L. innocua population significantly increased, suggesting that the
prolonged antimicrobial effect observed for the bioactive coating
was in some way offset by the consequences of PL treatment, with
brown spots being observed also on these samples.
