Morphology of the starch samples
The micrographs of the N and CL starches as well as those affected
by AA and LA are presented in Fig. 1. As expected, wheat
granules exhibited two separate distributions of granule sizes
and clearly different shapes. The large, oval granules (type A) and
smaller, more spherical granules (type B) can be observed for the
N and CL wheat starches. For N starch (Fig. 1A) the granules had
basically a smooth surface, while, after cross-linking some spots
and pores appeared on the surface of the CL starch which are more
obvious on the type A granules (Fig. 1A and D). Similar results were
reported for CL wheat (Majzoobi et al., 2009, 2012b) and banana
starches (Carmona-Garcia, Sanchez-Rivera, Mendez-Montealvo,
Garza-Montoya, & Bello-Perez, 2009). After treating the N starch
with LA or AA, the granular morphology changed slightly. Both
acids caused some granules to deform and some cracks and spots
appeared on the surface of the granules. These changes were observed
to a greater extent on the surface of the CL starch treated
with AA and LA. In addition, samples treated by AA or LA had almost
similar appearance and it was not possible to find any major
difference between these samples from the micrographs. The presence
of proteins on the surface of the starch granules called
‘‘starch-granules associated proteins’’ has been well defined by
Baldwin (2001). The chemicals used during cross-linking of the
starch and the organic acids may affect these proteins and cause
some changes to the surface of the granules. Similar observations
were reported for native wheat starch affected by L-ascorbic acid
(Majzoobi et al., 2012a) and L-cysteine (Majzoobi, Farahnaky, Jamalian,
& Radi, 2011).
