The enological parameters values for the initial must were
similar to those for other musts made with sun-dried grapes from
the same region (Franco et al., 2004; Lopez de Lerma, Bellincontro
et al., 2012; Lopez de Lerma, Moreno, & Peinado, 2014). The pH of
the initial must, 4.3 ± 0.2 was corrected to 3.8 with tartaric acid and
reached 4.0 ± 0.2 at the end of fermentations. Table 2 shows the
general enological parameters for the seven sweet wines produced.
The final content in reducing sugars was similar in all the
fermentation batches, with the yeasts using glucose in preference
over fructose. The criterion used to stop the process, an ethanol
concentration around 13% v/v and addition until 15% v/v, precluded
significant differences in this parameter, and also in the final content
in reducing sugars, between fermentation processes.
