The total antioxidant activity was obtained by a modified DPPH
method consisting in the capture of the free radical 2,2-diphenyl-1-picryl-hydrazyl through
antioxidants.
A solution of methanol containing 0.06 mM DPPH
was prepared.
After adjusting with methanol an amount of 100 lL of extract was added to 3.9 ml of this solution. Following
that, to determine the reading time, a preliminary study was made
observing the absorbance reduction at 515 nm in 1 min intervals
for the first 15 min and then in 5 min intervals until stabilization,
for a total time of 125 min for the readings.
The antioxidant activity was expressed as the concentration of antioxidants required to
reduce the original amount of free radicals in 50% (EC50). The results were expressed in g fruit/g DPPH.
