1 large yellow onion
1 bell pepper, seeded and sliced into strips

1 jalapeño pepper, seeded and minced or not seeded if you like it really hot
1 tablespoon cumin
1 cup store bought salsa or make your own
1/4 cup chopped fresh cilantro
2 sliced scallions and 1 large tomato chopped for garnish
1 cup low fat sour cream, or the real stuff
1/2 cup of shredded cheese
