Experimental measures of the water content in pineapple
fresh fruit displayed a high variability, ranged between 6kg
water/kgd.m.and9kgwater/kgd.m.Intheexperimental conditions of the present study, samples did not reach moisture
values higher than 4.5kg water/kg d.m., if the moisture was
calculated with the assumption that the dry matter remains
constant during the rehydration process
