The antioxidant synergism is
kinetically controlled and depends on a proper contact in the lipid/
water interface and on a fast electron transfer fromthe regenerating
polyphenol anion to β-Car•+.15 The second-order rate constant for
this bimolecular reaction between a carotenoid radical cation and a
plant polyphenol has now been determined for several combinations
of carotenoid and anions of plant polyphenols.3032
