Approximately 2 g of sample were suspended
in 50 ml of water and then 50 ml of soybean
oil was added. The mixture was emulsified using
a homogenizer (IKA ULTRA TURAX-T25) with
designation of a dispersing tool (S25N-25F) at
135,000 rpm for 1 min. The emulsion obtained was
divided equally into 2 centrifuge tubes. One tube
was centrifuged at 4,000xg for 5 min. The other
tube was heated to 80°C for 30 min and cooled to
room temperature then centrifuged at 4000xg for 10
min. EA and ES were calculated by the following
formulas:
