Sage extract was added to achieve a final concentration of either 100 or 200 umol/L RA, and RA was added at the same concentrations.
A control emulsion was also made in which water was added in place of sage extract or RA. Each emulsion was divided evenly into 3 jars of 50 mL/jar and stored in an STM 135 convection oven (Precision scientific, Chicago, Ill.. U.S.A. ) at 50 C for 10 d.
Every 2 day, a 5 mL aliquot was removed from each jar to measure peroxide value and headspace volatiles to track the degree of lipid oxidation.
