For the former, the
respondents were asked to indicate to which extent they agree
with statements, such as ‘‘brown bread is healthier than white
bread’’ and ‘‘multigrain bread is healthy’’. For the latter,
respondents had to indicate their extent of agreement for
statements such as ‘‘bread is good for digestion’’, ‘‘bread makes
fat’’ and ‘‘bread is a staple food’’. The latter statement was included
as a proxy for balanced diet, because starch products are
recognized as an essential part of a balanced diet for decades
and should be consumed regularly.
