the presence of smaller and more uniform droplet sizes were exhibited (Fig. 3 b, d and f). Large aggregates of fine droplets were found in the samples which had passed preheat temperature at 70C. At higher heating temperature, smaller clumps of fat droplet were detected. Excellent distribution of small aggregates of a few numbers of fat droplet was obviously seen throughout an aqueous phase in the samples passing preheat treatment at 90C.
