Both high b∗ values and low hue angles describe the intensity of the yellow color of a material, while the L∗ values describe its lightness (Selahle, Sivakumar, Jifon, & Soundy, 2015). When the fruit was ripe, the color of the pulp was darker yellow in cv. Chanee than in cv. Monthong (Fig. 1). Hue and L∗ and b∗ values are shown in Fig. 4. Cv. Chanee had higher b∗ values than cv. Monthong, from week 14 after anthesis. It also had lower hue values than cv. Monthong, from week 12 after anthesis.
