Abstract
Rice bran oil (RBO) is gaining interest in terms of its health and nutritional aspects, as well as its wide application. RBO in its natural state contains several constituents which would potentially provide benefits to health. The key elements responsible for health benefits of RBO include fatty acids, unsaponifiable mater, antioxidants, oryzanol, tocopherols, and tocotrienols. However, these elements are reduced dramatically during crude RBO refining processes. Organic RBO prohibits the use of extreme refining processes and therefore preserves the nutrients. This chapter reviews the benefits of RBO with regard to the processing effects and its health benefits, with particular focus on its key components and their mechanisms in promoting human health.
