Thermal treatment and aseptic filling
The thermal pasteurisation was carried out in a pilot
plant using an electric plate heat exchanger with a
nominal flow of 150 L h
1, equipped with a pneumatic
return valve for the non-pasteurised product (Suma´
Indu´ stria e Come´rcio Ltda., Campinas, SP, Brazil).
The pasteurised product was pumped into and stored
in an isothermal holding tank, made of stainless steel
with a capacity of 85 L. The filling process started
approximately 1 h after the end of the thermal pasteurisation.
