The objective of this part was to estimate the Enterobacteriaceaeand
Pseudomonas contamination levels of pork
meat cuts to define target levels defining the acceptability
of the cutting process. First, we defined rules to take into
account counts below the enumeration threshold. Indeed,
these results bring important information but neither the
Commission Decision 2001/471/EC (Anonymous, 2001),
nor the recent Commission Regulation (EC) No. 2073/
2005 describe how to deal with these results when calculating
daily mean log bacterial counts.
