assessing their cariogenicity and evidence suggests that
both the amount of sugar consumption and the frequency of
ingesting between meal sugary snacks are related to caries
in humans.29 Any fermentable carbohydrate such as glucose,
sucrose, fructose or cooked starch can be metabolised by
certain oral bacteria with the evolution of organic acids (e.g.
lactic, acetic, propionic) as by-products.26
