To fully evaluate the potential use of this antimicrobial coating on
RTE roast beef, the three specific objectives of this study were: 1, deter-
mine the solution's most efficient antilisterial concentrations by using
roast beef as a model; 2, evaluate the impact of roast beef storage time
on the solution's antimicrobial effect; and 3, investigate the potential
influence this antimicrobial solution has on roast beef quality by using
instrument measurement and sensory panel evaluation.
