For Bologna-type mortadella lightness, regression
analysis indicated a quadratic effect (p < 0.05) of storage
time for the antioxidants MSE 0.1% or MSE 0.2% according
to the equations y = 62.02 – 0.32x + 0.01x2; R2 = 0.77 and
y = 61.57 - 0.33x + 0.01x2; R2 = 0.76, respectively
