Procedure For Making French Macaron
The first step consists in combining some almond meal and some powdered sugar. Make sure that the mixture is as finely ground and powdery as possible, that is going to give you that smooth and beautifull top to your macaron and it will make your cookies really light.

Add a little bit of salt to your egg whites and some cream of tartar. You are then slowly going to add your granulated sugar. It is now time to add the flour and sugar mixture to your egg white mixture and this is where it can all go wrong.
If you over mix, you are going to end up with a macaron that is flat and does not have the little ridges around it and that is really the mark of a true macaron.
If you get a macaron that has ridges on it you have really succeeded. If you under mix, then you are going to end up with a macaron that cracks on the top of it and that is also not good.
So, you want to go somewhere in between, you will know that you have reached the right consistency when your batter does not have ridges in it like you don’t really see the bumps in the almonds and it is still easy to mix.
You are then going to transfer your batter into a pastry bag that is fitted with a tip that is about half an inch in diameter.
You then want to make sure that you have two cookie sheets ready to go, make sure to use parchment paper because if you use oil you will ruin your macarons.
It is now time to prepare the filling, the raspberry butter cream. Start by beating up a half a stick of butter, make sure to let it go for five or seven minutes until it gets nice and fluffy.
Then, you are going to slowly add your sugar and your raspberries and mix it up for another five minutes and finally pour the filling onto the macarons.
