2.2. Sampling
Samples from Semimembranosus and Biceps femoris muscles were
taken for moisture determination. For the other assays, samples (50 g)
from Biceps femoris muscles were taken and kept at −80 °C until
analysed. In all cases, 3 hams per formulation and sampling were
used. The sampling process was carried out on the raw material and
after 20 and 50 days of postsalting for formulations I, II and III, at
80 days in the formulations II and III, and finally at 270 days in the
three formulations (I, II and III).
2.3. Moisture determination
Moisture contentwas determined in 2 g of mincedSemimembranosus
andBiceps femorismuscles, respectively, by drying to constant weight at
175 °C using a moisture halogen analyser (Mettler Toledo AG,
Switzerland).
