1) beat eggs, milk and salt until whites are blended with yolk.
2) heat butter in an omelet pan and add beaten eggs.
3) mixture should begin to cook at outer edges. lift cooked portions at the edges so uncook portions flow underneath. slide pan rapidly back and forth over heat to keep mixture in motion and sliding freely to avoid sticking.
4) fold into oval shape in front part of pan.
5) turn omelet onto a warm plate.
