W1/O/W2 emulsionswere prepared by blending theW1/O emulsions
with external aqueous phase (250 mM NaCl) containing 1% Tween 80
using a high shear mixer (M133/1281-0, Biospec Products Inc., ESGC,
Switzerland) at low speed. The proportion ofW1/O to external aqueous
phasewas 1:1. The resultingmultiple emulsionswere then diluted using
salt-free buffer solution to different dilution factors (DF = 1 to 5 vol.).
After that the multiple emulsions were either left unheated or they
were heated at 90 °C for 20 min. The multiple emulsions were sealed
