The effect of rapid chilling and the time of deboning on the drip loss is presented in Table 2. Regarding the criterion for drip loss (non-exudative pork: DL < 6% after 48 h; Joo et al., 1999), the average drip loss of all investigated groups of SM muscles was at the level which corresponds to normal quality muscles.
