The results indicated that there were no losses of
the minerals, but slightly increase after parboiling process. The
parboiled rice showed the enhanced mineral content with highest
potassium content (107.09–120.30 mg%) followed by phosphorus
(92.15–101.10 mg%), while in expanded rice potassium varied
from (105.60 to 123.20 mg%) and phosphorus from (87.85 to
93.85 mg%).
