The method for the determination of produced β-glucan is also an important factor which determines the final or in-between step measurement of yield and purity of prepared β-glucans. The official method for yeast β-glucan measurement is AOAC 995.16 (2000 AOAC International).[39] In the methods examined here, different β-glucan determination methods are used based on glucose or total carbohydrate analysis.[40-45] Also, recent years enzymatic methods for yeast β-glucan determination have been developed for their use in industry.[46, 47] The different methods for the β-glucan determination, used in each β-glucan extraction method, are reviewed in Table 3.
