Only in recent years had the trend slowed to some extent. In the U.S.A, the tables have turned completely and it has now become fashionable to drink almost “anything but Chardonnay and Cabernet”. Interest is growing in outstanding, distinctive wines with regional character particularly in Europe, whose grape varieties provide a huge pool of genetic resources. At the same time, the winemakers of the New World are increasingly returning to wines which reflect the individuality of a particular terroir, and their products are becoming more delicate and elegant, lighter in terms of EXTRACTIONS, and less marked n=by the flavors of wood. In the coming years and decades, therefore should make the world of wine that little bit more varied and interesting.
