The values of Aw, Ao, Ew andE o are 60.96 s1, 2.08 s1,
2.55104 kJ/kg mol and1.28 104 kJ/kg mol, respectively,
as inferredfrom the intercept andslopes of the
plot of lnKw and lnKo vs. T1 as per Eqns. (5) and
(6) (as shown in Fig. 3a). It is interesting to note from
Fig. 3b that increase in the coefficient for moisture
transfer (Kw) due to increased frying temperature
resultedin an increase in coefficient for oil transfer
(Ko) during frying.
