Our results showed that the combination of pressure and temperature produced different variations in the concentrations of the ketones detected. Only the levels of 3-heptanone were not affected by HPT treatment. In fact, the concentration of 1,2-cyclopentanedione was significantly (p < 0.05) increased after the application of 300 MPa at 50 °C. Similarly, the ketone 6-methyl-2-heptanone was not detected in control samples, whereas the combination of 600 MPa with 65 °C and 80 °C, and 900 MPa with 50 °C, 65 °C and 80 °C caused a significant (p < 0.05) increase in this compound. In contrast, the level of 3-nonanone was remarkably decreased after the application of all treatments, with respect to the control values.
