The high antioxidant activity of polyphenols (quercetin
7.3 TE) and phenolic acids (caffeic acid 4.4 TE) to scavenge peroxyl
radicals, generated in the ORAC method, compared to ascorbic acid
(0.95 TE) might be the reason for the low portion of vitamin C
contributing to the ORAC assay (Ou et al., 2001).
