This was similar to previous results with other cryoprotectants. Furthermore, no obvious difference in mitigating the decrease in the Ca2+-ATPase activity of myofibrillar protein was observed between 1% KGM and 10% sucrose–sorbitol mixture,indicating that KGM as a novel cryoprotectant could be in replace of sucrose–sorbitol mixture (commercial cryoprotectant) for use in the surimi processing.
