Free amino groups of cuttlefish skin gelatins with oxygenated ECWE or ECBE at various levels are shown inTable 3. Gelatin
gels with both extracts had fewer free amino groups than that of the control gel (po0.05). The rate of loss of free amino
groups of gelatin depended on the concentration of the extracts. At the same concentration, the greater loss in fre
