3.4. Instrumental color
At the initiation of the study, the L* values of the control, AA- and
PG-containing samples were higher (pb0.05) than those of GSEcontaining
samples indicating that the former were lighter than the
latter (Fig. 5a). In general, L* values of all samples increased (pb0.05)
over time. The control increased from about 50 to about 52 after
4 months of storage. GSE-containing samples also increased about 2
units during the 4 month storage period indicating they were
becoming lighter as well, however, after 3 months of storage, L*
values of samples containing 100 ppm GSE were highest and those of
samples containing 500 ppm GSE were lowest of the GS-containing
samples. L* values of AA- and PG-containing samples were most stable
during storage.
