Reducing power
Reducing power was determinate by the
method of Oktay et al. (2003). Methanolic extracts of candy
samples was dissolved in 2.5 ml of 0.2 M phosphate buffer
solution (pH 6.6). 2.5 ml of 1 % potassium ferricyanide was
added to it. The mixture was incubated at 50 °C for 20 min. To
this solution was added 25 ml of 10 % trichloroacetic acid
(w/v) and centrifuged at 3000 rpm for 10 min. 2.5 ml of the
supernatant were collected, to which 2.5 ml of distilled water
and 0.5 ml of 0.1 % FeCl3 solution was added. Absorbance
was measured at 700 nm and the results were expressed as
percent reduction using the formula
