Z. bailii was not isolated anaerobically but was able to develop and
exhibit fermentation activity in the food supplement also in
complete anaerobiosis (Fig. 3). This observations can be explained
with the varying ability of Z. bailii to grow in complete absence of
oxygen with changes in the composition of the growth medium
(Rodrigues et al., 2001). It must be noted that oxygenwas present in
the commercialized bottles and could favour the growth of this
spoiling microorganism.
