We did notice that TRMH-Neutrase with the lowest DH (11%) and
the highest hydrophobicity, exhibited the highest DPPH scavenging activity.
Higher enzymatic cleavage resulted in the formation of shorter
chain peptides possessing more hydrophilicity. Those peptides had
less efficacy in scavengingDPPH• radical. The antioxidant activity of protein
