The garlic used in the experiments was of the purple variety. The equilibrium data were obtained by the static method, using saturated salt solutions, as proposed by Greenspan (1977). Salt was chosen in order to obtain a wider range of relative humidities. Table 2 describes the saturated salt solutions used here and the respective relative humidity at the five temperature levels employed in the experimental work.
