Analysis of the hydrolyzate of sheep carcasses digested at a rendering plant in the United Kingdom and subjected to matrix-assisted laser desorption/-ionisation-time of flight mass spectrometry (MALDI-TOF MS) analysis showed that the largest peptides found had a molecular weight between 800 and 1,100 Daltons (Da), i.e., were in the range of 7-9 amino acid residues.
