Antioxidant efficacy of mangosteen (Garcinia mangostana Linn.) peel extracts in sunflower oil during accelerated storage
This studyevaluatedtheefficacy ofmangosteenpeelextracts(100and200ppm)instabilizingsunfloweroil
testedunderacceleratedstorage(65 °C) foraperiodof24days.BHAand α-tocopherolwereusedascom-
parativestandardsbesidesthecontrol.Establishedparameterssuchasperoxidevalue(PV),iodinevalue(IV),
p-anisidine value(p-AnV),totaloxidationvalue(TOTOX),thiobarbituricacidreactivesubstances(TBARS)and
freefattyacid(FFA)contentwereusedtoassesstheextentofoildeterioration.After24daysstorageat65 °C,
sunfloweroilcontaining200ppmextractofmangosteenpeelshowedsignificantlowerPVandTOTOX
comparedtoBHAand α-tocopherol.TBARS, p-AnVandFFAvaluesofsunfloweroilcontaining200ppmof
mangosteenpeelextractexhibitedcomparableinhibitoryeffectswithBHA.Mangosteenpeelextractat
200ppmexhibitedinhibitoryeffectagainstbothprimaryandsecondaryoxidationupto24daysunder
acceleratedstorageconditions.Thus,itissuggestedthatmangosteenpeelextractmaybeusedasapotential
sourceofnaturalantioxidantsin theapplicationoffoodindustrytosuppresslipidoxidation
