3.3.1. Extraction of morphological characteristics from egg yolk
Scattered yolk is a significant morphological change and could be observed in egg images. Extraction of morphological characteristics was analyzed in intact and scattered yolk eggs and shown in Fig. 5. The RGB, mask, and yolk morphological images of an intact egg were shown in Fig. 5a–c. Images of a scattered yolk egg were shown in Fig. 5d–f. In the final binary images (Fig. 5c and f), the remaining white regions represented an isolated egg yolk, showing the effectiveness of the proposed segmentation algorithm for the extraction of morphological characteristics
