The trimethylamine oxide contents in the
muscle extract from L. vannamei cultured in sea
water and low salinity water were 4.52 0.73 and
4.23 0.69 mg/100 g, respectively, and they did
not differ significantly (P > 0.05). The betaine contents
were 268 5.52 and 179 6.78 mg/100 g,
respectively, and the value for samples cultured in
sea water were higher than for those cultured in
low salinity water (P < 0.05).
