After exclusion of inhibition due to the action of
hydrogen peroxide, the two strains of L. lactis subsp.
lactis TAUL 71 and 78 once again showed antimicrobial
activity against the two susceptible strains. L. lactis
subsp. lactis var. diacetylactis (TAUL 13) acted against
one of the three susceptible strains, while Lb. plantarum
(TAUL 1539) showed activity against nine of the 12
susceptible strains (Table 1) and against the reference
strain Lb. plantarum CECT 748. Consequently, Lb.
plantarum TAUL 1539 showed the greatest range of
inhibition of indicator strains. Indeed, it inhibited
strains of L. lactis, Lb. plantarum, Lb. brevis and Ln.
mesenteroides. Nevertheless, none of the strains tested
was active against L. monocytogenes (CECT 4031), S.
aureus (CECT 240), E. faecalis (CECT 481) or C.
tyrobutyricum (CECT 4011), in an agar well diffusion
assay after prior treatment of the extracts with catalase.
