3.3. Sensory analysis
Color, aroma, and acceptability were evaluated by sensory
analysis (Table 2–4). After week 10, salmon packaged in CPP
pouches was not measured for sensory analysis due to the samples
being completely unacceptable.
Salmon packaged in SIOX pouches had the highest value (more
red color) in color evaluation at storage times between week 1 and
5 and between week 10 and 12 (Table 2). Salmon packaged in CPP
pouches had the lowest value (lighter than reference) in color
evaluation from week 8.
There were no significant differences in aroma evaluation
between four samples until week 2 (Table 3). Salmon packaged in
CPP pouches had the highest aroma value (strongest aroma) at
storage times between week 5 and 8. CPP has poor oxygen barrier
properties and as a result it may allow more lipid oxidation and
rancidity to occur, thus producing a stronger aroma. Salmon
packaged in SIOX pouches had higher aroma values than salmon
packaged in ALOX and FOIL pouches at storage times between week
10 and 12 due to the poor oxygen barrier properties of retorted
SIOX.
Salmon packaged in SIOX pouches had the ‘‘most acceptable’’
sensory value at storage times between week 2 and 5 (Table 4). This
may be due to the high color value (red) of salmon packaged in SIOX
pouches. However, salmon packaged in SIOX pouches was considered
less acceptable than salmon packaged in Foil and ALOX
pouches after week 8. This was largely due to the stronger aroma of
salmon packaged in SIOX pouches. The high OP of retorted SIOX
caused more lipid oxidation to occur in the salmon packaged in the
SIOX pouches and, consequently, it generated a stronger aroma and
causing less acceptability by the sensory panelists.
SIOX did not provide adequate barrier for maximum shelf
life when compared to both ALOX and FOIL barrier materials.
Conversely, ALOX had similar results compared to FOIL in sensory
evaluation. Therefore, retort pouches containing ALOX coated
barrier films can provide adequate barrier for maximum shelf life
when compared to retort pouches containing aluminum foil barrier
films.
