The liver was weighed and
sampled. A sample of the LM was collected within 20 min
of death at the last rib on the right carcass side and trimmed
aponeurosis. All tissue samples were cut into small pieces,
snap frozen in liquid N, and stored at –75°C until biochemical
analyses. The carcass was weighed and carcass yield
was calculated as the ratio of HCW to live BW.
