A large consumption of cooking oils and high-fat contents
in raw materials are the causes for the high PM2.5 emission from
meat roasting and cafeteria frying. OC was the dominant component
in the cooking samples, accounting for 14–58% of PM2.5 and 89–98% of
total carbonaceous species.
