The variation of average density of coconut milk with temperature at various fat contents is shown in Fig. 3. The average density (3 replications) of coconut milk with 20–35% fat contents at different temperatures (60, 70, and 80 C) were 969.00–983.05 kg/m3, with standard deviation in the range of 0.171–1.027 kg/m3. The statistical testing showed that the fat content and temperature had a significant effect on density at a 95% confidence level.
