Roselle (Hibiscus sabdariffa L.), belongs to the Malvaceae family (Wong et al., 2002). Traditionally, the calyxes are dehydrated by exposure to direct sunlight, despite the limitations implied, such as the lack of control of drying conditions and the eventual loss of some attributes such as antioxidant capacity.
