Water holding capacity (WHC)
Cooking loss and drip loss were conducted as WHC analyses.
Cooking loss (%) was also recorded for each sample by weighing before
and after cooking.

Drip loss was determined using the bag method (Honikel, 1987)
with modification. The sample was weighed and then hung in an
airtight plastic bag using a hook under the lid. After storage for 24 h
at 1 °C, the sample was weighed.
