Many beef slaughter plants now use lactic
acid washes on carcasses to reduce contamination. It had been
reported that warm (55 C) 2% lactic acid spray was effective in
reducing total microbial, Enterobacteriaceae, coliforms, and
Escherichia coli counts on beef carcass (Castillo, Lucia, Goodson,
Savell, & Acuff, 1999).
