Lb. plantarum C182 possesses significant degree of resistance
against low pH and 0.3% bile salts. While Leu. mesemteroides F27
possesses high enzyme activities and adhesion capacity, and
moderate resistance against low pH and bile salts. If kimchi is fermented
with Lb. plantarum C182 and/or Leu. mesemteroides F27kimchi with improved functionality might be produced. For this
reason, LAB strains with desirable properties should be continuously
isolated from natural environments including kimchi by
methods used for this study.
