Except for 20% VP treatment, there were no significant changes (P N 0.05) in TBARS for the MAP and VP treatments during storage when compared to day 0 (Table 3). These results suggested that the MAP and VP systems functioned to retard oxidative rancidity by limiting oxygen transmission. Significant increases (P b 0.05) in TBARS for the PVC group were observed for 10 and 20% fat treatments by day 7 when compared to day 0.Within the MAP treatment, the 30% fat treatment yielded higher (P b 0.05) TBARS values than the 10% fat treatment on Days 1, 7 and 25 which suggested that fat level may have had a significant effect on lipid oxidation.
